Chocolate Blackout Cake
Culinary Capers‘ wedding cake created by Susie Findlay is a chocolate blackout cake with layers of pecan toffee and milk chocolate mousse. She suggests “serving each slice with a dollop of vanillla chantilly cream and a little kumquat compote.”
This size of cake will serve approximately 300 people. The cake is covered with a thin layer of rolled fondant, decorated with tiny apples made from marzipan airbrushed with colour, then rolled in berry sugar.
