The Metropolitan Hotel Vancouver is happy to launch their new wedding menus, featuring dishes that would be right at home at the hotel’s Diva at the Met restaurant.
“If a couple usually cares about food, they’re not going to want to compromise the quality and creativity of the dishes served on the most important day of their life,” said Chef Romeo Bartyuk, who is responsible for banqueting events at the Metropolitan Hotel Vancouver. “Our new wedding menus carry the same food philosophy as Diva at the Met: we use the best seasonal ingredients sustainably sourced through our relationships with local farmers, fishers and artisan producers to create contemporary cuisine with a real sense of place.”
Dishes on the new menus include rare-seared albacore tuna with pea shoots, shiitake mushrooms, sweet onion and soy dressing; milk poached smoked black cod with charred lemon pomme puree and celery nage; and overnight braised beef shortribs with creamy spaetzle and sage brown butter.
